Set It and Forget It: Three GF/DF Dinners That Cook Themselves

If our kitchen caught fire and we could save one appliance, it wouldn't be a contest. The slow cooker wins, and it isn't close.

Here's why it matters extra in a GF/DF house: the slow cooker moves both the decision and the cooking to the morning — when you're caffeinated and reasonable — and hands you dinner at 5pm, when you're neither. The witching hour arrives and dinner is already done. That's not a recipe. That's a cheat code.

Naturally safe, by design

Slow-cooker food is also naturally suited to eating GF/DF. Braises and soups are built on meat, broth, vegetables, and time — no flour roux, no butter finish, no breadcrumb topping. Most of ours are safe without substituting a single thing, and where creaminess matters, coconut milk or almond milk steps in at the end and nobody can tell.

Six of our thirty dinners are set-it-and-forget-it on purpose — one for roughly every five nights of the month.

Set it in the morning, shred it by evening.Fall-apart beef in a sweet-savory Korean-style braise, over creamy coconut rice. The kind of dinner that tastes like effort and took none.

Dump-and-go comfort.Chicken, wild rice, and veggies cook low and slow all day, then a splash of almond milk turns it creamy at the end — no dairy, no fuss, and it reheats beautifully all week.

The big-batch bonus

Slow-cooker dinners are the engine of the cook-once-eat-twice system: they make big batches with zero extra effort, and big batches become tomorrow's remix. The carnitas becomes nachos. The pot roast becomes rice bowls. One morning of prep, two nights of dinner.

Cameron's TipBuy the cheap cut on purpose — pork shoulder, chuck roast. Eight slow hours does what money would've done, and the leftovers are better. All six set-and-forget dinners, with their remixes and shopping lists, live in Dinner Solved.
